Sweet Honey Walnut Shrimp

Directions
1. Line a baking sheet with parchment paper and set aside. In a small, nonstick skillet, toast the walnuts over medium heat, stirring occasionally, until the nuts are toasty and golden. Add the honey to the pan and cook, stirring often, until the honey coats the nuts and starts to bubble and caramelize, about 3-4 minutes. Pour the nuts out on to the prepared baking sheet, being sure to separate. Let cool completely.
2. Make the sweet honey sauce by mixing together the mayonnaise and Bachan’s Sweet Honey Barbecue Sauce. Set aside.
3. In a bowl, mix together the flour, cornstarch, and baking powder. Lightly pat the shrimp dry and season with salt and pepper then add to the bowl with the flour mix. Toss, making sure all the shrimp are well coated.
4. In a deep, heavy bottomed, high-sided pan, heat about 2” of oil to 365°F.
5. When the oil is hot, carefully add the shrimp, individually, being careful not to crowd the pot. Cook, flipping as needed, until the shrimp are golden and cooked through, about 2-3 minutes. Remove the cooked shrimp from the oil and drain on a wire rack until all the shrimp is fried.
6. Toss the hot shrimp in a large bowl with the Sweet Honey Bachan’s mayonnaise. Plate, topping with the honeyed walnuts. Enjoy immediately!

• 1 lb large shrimp, peeled and deveined
