Beef Brisket Reuben

Directions

  1. Heat the oven to 330F. 

  2.  While it’s warming up, prepare the beef brisket: liberally season all sides with salt and pepper.  In a heavy bottomed oven-safe pot, layer in the onions, followed by the beef brisket, and then pour Bachan’s Original Japanese Barbecue Sauce and the beef broth on the beef. Cover the pot and put it into the oven and cook for roughly two hours or until the internal temperature of the beef brisket is between 195-205F.  At the hour mark, give the brisket a flip in the sauce and once complete, remove from heat to cool.  Once cool to touch, use a sharp knife to cut the brisket into thin slices.  The beef brisket can be scaled but ensure that the internal temperature reaches the correct temperature outlined above. 

  3. While the brisket is cooking, make the Russian dressing by simply mixing all of the ingredients together until fully combined. 

  4. To prepare the sandwiches, first slather some of the Russian dressing onto a piece of bread, followed by the sliced dill pickles, thinly sliced beef brisket, the saucy onions that were cooked in the Bachan’s Original Japanese Barbecue Sauce, a generous serving of sauerkraut, swiss cheese, more Russian dressing, and the final piece of bread.  If you want, you can put the sandwich up until the swiss cheese in the oven to broil for some melty action.

  • 1.7lb beef brisket 
  • 1 cup Bachan’s Original Japanese Barbecue Sauce 
  • 1 cup beef broth 
  • 1 large onion, cut into large rounds (roughly in thirds) 
  • Russian Dressing: 
    • 1 heaped tablespoon dill pickle, chopped 
    • ¾ cup sour cream 
    • ¼ cup mayonnaise 
    • 1 tablespoon horseradish sauce 
    • 1 tablespoon sriracha 
    • 1 teaspoon worcestershire sauce 
    • 1 tablespoon ketchup 
    • ¼ teaspoon smoked paprika 
  • 8 pieces of sandwich bread of your choice (rye is the classic) 
  • Dill Pickles, thinly sliced 
  • Sauerkraut 
  • Swiss Cheese
